Brilliant for those mornings when eggs are needed but an uplifting & light breakfast is actually what you're aiming for
Feel free to use what ever herbs you have in the house and if fresh is not available then dried will do. You can also omit the coconut milk if you prefer….

SERVES 2

Green Detox Omelette

Ingredients

4 x eggs, at room temperature
2 tablespoons coconut milk
2 tablespoons each of roughly chopped chives + parsley + dill
1/2 cup baby spinach
Pinch of seasalt + fresh cracked black pepper
2 x teaspoons melted coconut oil
Lightly dressed salad leaves of your choice
2 x tablespoons crumbled goats cheese or feta (optional)
1 x teaspoon hemp seeds

Directions

In a medium bowl, add eggs + coconut milk (optional) and whisk until combined. Add herbs & whisk again
Place large non-stick pan over a medium heat & add coconut oil so that it coats the surface evenly
Add half of the egg mixture to pan and quickly swirl the pan around until it forms an even layer over bottom of the pan. Cook the omelette until the egg is just set (1-2min) Its done when the edges are dry & top is no longer runny. Using a spatula, carefully remove from pan and place on serving plate
Place half of lightly dressed salad leaves on top and 1/2 cheese, if using, then sprinkle 1/2 hemp seeds over. Fold omelette in half and serve with dash cracked pepper
Repeat with remaining ingredients to make another filled omelette in the same way
